Merry Christmas, 2013!

Merry Christmas everyone!
I'm sorry that my blog is dead with only 2 post, as I have been quite busy lately >_<

I decided to baked cupcake yesterday as it was Christmas Eve xD but things turned out really bad.
Wanted to give my boyf a surprise but I failed. Because I didn't have the beater machine. LOL. Didn't had energy to beat the eggs and got to ask my boyf down for help T^T
Everything was in a mess. And so, I didn't took much pictures!

I grabbed the recipe from KayKay's blog but I didn't add a lot of sugar or icing sugar as I thought it was a lot, to me xD
Here's the recipe I used :)
*credits to her for most of the part xD

Crust
15 pieces of digestive biscuits, crushed (turned out to be a little too much for me. Gotta use like 10-12 next time!)
125 grams of butter
3 tbs of sugar

Batter
4 egg whites and 2 tbs of sugar
1.5 cups of all purpose flour
1 tsp of baking powder (I added 1 tbs instead coz I was too sleepy after the egg white is done)
1/2 tsp of sea salt (Same mistake, used 1/2 tbs ><)
125 grams of butter
1/2 cup of sugar
1 tsp vanilla extract
2 cups of strawberry, hulled and diced

Frosting
250 grams of cream cheese
125 grams of butter
30-50 grams of icing sugar
1 tsp of vanilla extract

I followed exactly how KayKay did hers. Therefore, if you are interested in doing this cupcake, please read her blog post here :)

Of course, mine didn't turn out to be as good as hers as it was my virgin bake! Haha xD
Overall, I think my cupcake taste alright, just that it's a little too sweet. Shall try it baking this again next week! xD

Here's a picture of my cupcake after it's done. Almost burned for some, not sure why >< maybe I shouldn't use a Microwave Oven to bake or something ><

Gotta take a shower and hit the sack!
Hope you, who are reading, enjoyed my post! ;)
Drop me a comment or tweet me about your baking & pastries too! I'm really interested in reading all of them!
Hope you have an enjoyable Christmas with your loved ones!

Love,
Ger
xx
